Foodie Friday: Pumpkin Bread!

I love pumpkin cake, but I’ve never actually baked anything with pumpkin… before now. And fail, I was supposed to post this last week. Better late than never, right?


Here is the recipe:


  • 3 eggs, well beaten
  • 1 cup vegetable oil
  • 2 cups canned pumpkin
  • 3 1/2 cups flour
  • 2 tsp baking soda
  • 1 1/2 tsp salt
  • 2 tsp cinnamon
  • 3 cups sugar
  • 1/4 cup water

Firstly, preheat your oven to 350 degrees

So basically what you want to do is mix your wet ingredients: pumpkin, water, eggs and oil and blend well. Then mix your dry ingredients together. Make a well in the center of the dry ingredients, add your wet and mix until smooth.

Pour into 2 greased loaf pans and bake for about an hour. You can start checking it an an hour mark with a toothpick, once it comes out clean, it’s done!

I’m slightly obsessed with this recipe and everyone who’s tried it has loved it. I also used this recipe to make pumpkin muffins with mini chocolate chips!
