Foodie Friday: Udon Noodles with Mushrooms, Bok Choy and Bean Sprouts!

Accompanying last week’s Mongolian beef we have stir fried udon noodles! This recipe even required a trip to the Asian grocery!


Mmm noodles. These were inspired by this recipe. We made a few changes, like omitting the meat (because we were serving it as a side to meat lol), omitting the dark soy, adding bean sprouts, using baby bella mushrooms instead of shitake and adding some of the Mongolian beef sauce and Sriracha.

I actually let the boyfriend take control of this dish, and I have to say that he did a really good job! He doesn’t cook, so I’m proud of him. I think he secretly likes it though.

Because we didn’t use meat, we used the Mongolian beef sauce as a base to cook the veg and noodles in. We added more as needed for extra flavor. That stuff is too good. We also added some Sriracha at the end for a little heat, which was awesome.

Everyone loved these! You might not even want to get takeout noodles after having these.
