Foodie Friday: Butterscotch Chocolate Chip Blondies
This is my all time favorite blondie recipe, I’ve had it since high school and it’s been my go-to since.
I know you want to make these now… so here’s the recipe:
- 2 1/4 cups AP flour
- 1 tsp baking soda
- 1 tsp salt
- 2 sticks of butter, softened
- 3/4 cup sugar
- 3/4 cup packed brown sugar
- 2 tsp vanilla
- 1/2 tsp cinnamon
- 2 eggs
- 1 cup semi sweet chocolate chips
- 1/2 cup butterscotch chips
Preheat your oven to 350 degrees, and grease your baking pan. You need to use a rectangular pan for this, preferably 10×15, a square pan won’t be big enough and they won’t bake properly.
Combine the flour, baking soda, salt and cinnamon in a small bowl. Beat the butter, sugars, and vanilla in a mixer (or with a hand mixer) until creamy. Then add your eggs, one at a time, beating well after each addition. Gradually add your dry ingredients until combined, then mix in your chocolate and butterscotch chips. Spread into your prepared pan and bake about 25 minutes (give or take depending on your oven, check it with a toothpick after 20 minutes).
The original recipe had way more chocolate and butterscotch chips, but I found it to be way too many chips for the amount of batter. You can also add chopped nuts, or substitute anything additions for dried fruit or anything else you like. These would be perfect for the holidays.. maybe with dried cherries and white chocolate chips! Or peppermint chips and chocolate chips!
