Foodie Friday: Root Beer Cupcakes!

In honor of my boyfriend’s one week anniversary of quitting smoking (post to come) I made him root beer cupcakes!

I actually used a box mix for these, it was Duncan Hines Vanilla Cake mix. To make them root beer cupcakes, instead of the water I added Stewart’s original root beer. It came out to be almost an entire bottle.

The frosting is basically my no-bake cheesecake filling but with more whipped cream. This is what you need:

  • 1 package of cream cheese
  • 1/2- 3/4 cup of heavy cream
  • About 2 tbsp of sugar
  • About 1 tsp vanilla extract

So all you have to do is blend the cream cheese, sugar and vanilla extract, and whip up some heavy cream… in separate bowls, of course. Once everything is blended and the cream is whipped, add the cream cheese mixture into the whipped cream and fold together. Once everything is incorporated, it’s all done.

For this frosting, just take the recipe from above and add about 1/4 cup of cocoa powder.

I know root beer cupcakes might sound a little strange lol but they don’t taste completely like root beer. It just adds a little extra dimension to the cupcakes.

And there you have it! Root beer cupcakes!
